Protein Banana Oatmeal Mini-Muffins (gluten-free & dairy-free)

This is a moist and delicious, yet not too sweet, high protein/fiber snack, perfect for eating on-the-go.

1 ripe banana, mashed
1/2 cup quick-cooking GF oats (or grind GF rolled oats in food processor for 20 seconds)
1.5 scoops Shaklee 180 Smoothee Mix (any flavor)
1 pastured egg
1/2 tsp pure vanilla extract
1/8 tsp pure almond extract
zest of 1 lime
optional: 1 Tbsp pure maple syrup or 15 drops stevia (e.g. SweetLeaf)
optional: 1 Tbsp Enjoy Life mini chocolate chips, nuts/seeds, small dried fruit, or your favorite topping. 

Preheat oven to 350F, mash all ingredients together, scoop into silicone mini-muffin tray, sprinkle any toppings, bake for 15-20 minutes. Place tray on cooling rack for 5-10 minutes. Remove muffins and store in airtight container for up to 3 days, if they last that long. Makes 12 mini-muffins (or 3-4 high protein/fiber snacks). NUTRITION PER MUFFIN: 40 calories, 3g of protein, 1g of fiber.
